Hello All:
I am going to the beach with my in-laws for a week over Easter (God help me). I know it's a little early for beach cooking, but I'm sure that there are folks out there that have recipes that they take with them on beach vacations that are yummy but simplified. 5 Ingred/15 Minutes will definitely come with. I'm bringing a Honeybaked ham...Any suggestions for accompaniments?

Anyway, I'm from the South, and I'm not sure if this is a good accompaniment (word?) for Ham, but I love fruit when I get off the beach. Last week I made a Pistacio Ambrosia salad that was WONDERFUL! It also fits into your 5 ingred./15 mins. prep. I'm at work and am trying to remember this recipe. I'll check it at home for any missing steps or ingredients.
Box of Pistacio instant pudding (i used the Fat Free/Sugar Free version)
14-16oz. can of Pineapple chunks (with juice)
8 oz. can of diced pineapple
1 cup of shredded coconut
1 cup miniature marshmallows (I used a little more)
1/2 - 3/4 cup chopped walnuts, pecans, or almonds (depends on how much you like them)
8 oz. or 12 oz. of Cool Whip thawed (again, I used the Fat Free kind- got to cut calories where possible)
empty pineapple with juices into container. sprinkle jello over pinapple and allow to sit for 15 mins. Add the next two ingredients and mix together. Fold in the cool whip and allow to refrigerate for 3 hours.

Just got back from a great wedding reception on the beach in Isle de Palms, SC...they had tables of food set out including:
Fried Calamari
Crab Dip w/ crackers & bread
Fresh Fruit w/ Choc. Fondu
Fresh Veggies w/ Spinach dip
Cocktail Shrimp w/ sauce
Party Sandwiches
Baked Brie with brown sugar and butter/ served with crackers
Bite sized desserts
Cheeses
etc.
It was nice to have everything bite sized so you could grab a bite or two, and go out on the deck or to the beach. I really enjoyed the fruit...You could make the Tropical Fruit Salad from Jan/Feb 2001

Tropical Fruit Salad

2 cups fresh pineapple -- 1-inch cubed
1 cup papaya or mango -- peeled and chopped
1 cup kiwi fruit -- peeled and sliced (about 3)
1 cup red seedless grapes
3/4 cup carambola -- 1/4-inch thick slices (star fruit, about 1)
1/4 cup flaked sweetened coconut
3 tablespoons honey
2 tablespoons fresh lime juice
Combine first 6 ingredients in a medium owl. Chill at least 30 minutes.
Combine honey and juice in a small owl, and toss with fruit just before
serving.
Serving size: 1 cup. Calories 128 (13% from fat); fat 1.9g (sat 1.3g, mono
0.1g, poly 0.2g); protein 1.1g; carbohydrates 29.7g; fiber 2.9g; cholesterol
