View Full Version : Praline recipe Help!

I am hosting the entree portion of a progressive dinner tonight in our neighborhood. I am serving 10 at my home alone. I am one of 12 entree/salad homes. The food is catered (which is awesome), so everything was just delivered to my house. The salad look slike it could use something added to it...it's only lettuece, cucumbers and tomatoes....I plan to add some nice red onion, but want to add some toasted pecans or pralines for a holiday feel. Any suggestions on a recipe for the pralines?

What kind of dressing are you using? I'm thinking the bleu cheese pecans floating around could be interesting but I haven't made them yet so I'm not sure.

It looks like a raspberry type vinegerette.

These are great in a salad...

Spicy Pecans

4 cups (about 1 pound) pecan halves
6 tbs unsalted butter, melted
4 tsp Pasilla Powder (if you can't find it then you can grind 5 dried pasilla peppers in a spice/coffee grinder or use any chile powder you have)
1/2 cup packed brown sugar

Preheat oven to 350ºF. In a large bowl, toss the pecans and butter, until all surfaces are covered.
Sprinkle the chile pwder over the nuts, toss well again. Add the sugar; toss using your hands to keep the sugar from lumping. Dump the entire mixture onto a baking sheet, scraping the residue from the bowl on top of the nuts. Spread out evenly over the pan. Bake the nuts for 20 minutes or until the coating on the nuts begins to brown and the sugar melts. The coating, at this point, will not be crunchy, but as the nuts cool, the coating will harden. Store nuts in an airtight container.
