i am dying for some halibut or cod and have never cooked it before.
do you happen to have a yummy sauce to put on the fish or how do you make your fish?

Got this from the man who runs a fish market near me, and it's easy.
Place fish on aluminum foil sprayed with Pam (I prefer garlic, butter or olive oil flavored)large enough to enclose fish. Pour 1 c salsa over fish and seal foil. It then can be baked (350° for about 30 min) or grilled for about 15. Really good with sea bass too.

I usually bake cod. Combine equal parts melted margarine and lemon juice, dredge fish in liquid. Place in baking dish coated with cooking spray. Salt and pepper to taste, cover with fresh lemon slices and fresh herb of your choice. Bake at 350 for 30 minutes. Also very good with lime juice and lime slices instead of lemon. Very mild tasting but nice with a seasoned rice and veggie.

I like to dredge fish fillets in a little seasoned flour and then saute' them in a little olive oil or butter. Then I finish the dish with a little lemon juice, flat leaf parsley, and ground pepper. Yum.
Or, you can coat the fillets with toasted ground nuts. So easy, so delicious.

There are soooo many ways. One of my DH's favorites is from the Betty Crocker cookbook (and is light, of course). It is called spicy cornbread cod [I think] and it is really easy and delicious.
I can reprint the exact recipe if you would like, but you basically dip it into eggs whites or egg substitute and then bread it with a cornmeal mixture that has a little bit of cayenne or chili powder mixed in and then bake it. It tastes better than fried fish in our opinion, and it has a nice flavor. You know, I think I will make this next week http://www.cookinglight.com/bbs/smile.gif My DH will be so happy.

I found this recipe last spring when I had some fresh halibut. We liked it quite a bit.
Tropical Halibut Steaks
Marinade:
1/3 cup pineapple-orange juice
1/3 cup soy sauce
1/4 teaspoon curry powder
Fish:
4 6-ounce halibut steaks, cut 1-inch thick
Fruit Sauce:
1 8-ounce can pineapple chunks (I think I actually sued crushed pineapple)
1/4 of a medium cantelope or 1/2 of a papaya (1 cup)
dash of curry powder
2 teaspoons cornstach
Garnish:
2 tablespoons toasted coconut
For Marinade:
In a small mixing bowl combine all marinade ingredients. Place fish in a plastic bag set intoa deep bowl. Pour marinade over fish in bag. Seal bag and turn fish to coat well. Marinade in the refrigerator for 1 hour, turning bag occasionally. Remove fish from bag, reserving marinade.
To Prepare Fruit Sauce:
Drain pineapple chunks, reserving juice. Peel and seed cantalope or papaya. Finely chop fruit. In a small sauce pan combine chopped pineapple and cantalope or papaya and the curry powder. Add enough water to reserved pineapple juice to make 1/2 cup. Stir in cornstarch. Add pineapple juice mixture to fruit in saucepan. Cook and stir over medium heat until thickened and bubbly. Cook and stir for 2 minutes moer. Kepp warm.
To Cook by Direct Grill Method:
Grill fish on the greased rack of an uncovered grill directly over medium coals for 8 to 12 minutes or just until fish begins to flake easily, turning once and brushing with reserved marinade halfway through grilling time.
To Serve:
Spoon sauce over grilled halibut. To garnish, sprinkle with toasted coconut.

I was recently in Barcelona and had the most delicious halibut. It was probably sauteed then baked (looked like it had been glazed with a little oil) with sweet tomatoes and onions. It looked like they used a gigantic cast iron skillet. I don't know what the spices were, but it was yummy!
