I'm not sure what to make for dinner tonight. Looking for ideas. What are you making?

Buttermilk-Roasted Chicken with Date Butter from December's Food & Wine.

ACTIVE TIME: 15 MIN
TOTAL TIME: 25 MIN PLUS 4 HR MARINATING
SERVES: 4
THE GOOD NEWS Chicken, like turkey, can induce sleep. Dates can help you doze off too.
ingredients
2 garlic cloves, crushed
1 shallot, thinly sliced
1 tablespoon thyme leaves
1 tablespoon rosemary leaves
2 cups buttermilk
Salt and freshly ground pepper
Four 6-ounce skinless, boneless chicken breast halves
2 tablespoons unsalted butter, softened
2 dates, pitted and finely chopped
3 tablespoons plus 1/2 teaspoon fresh lemon juice
1 tablespoon extra-virgin olive oil


directions
In a food processor, coarsely puree the garlic, shallot, thyme and rosemary with 1/2 cup of the buttermilk. Blend in the remaining 1 1/2 cups of buttermilk. Pour into a baking dish; season with salt and pepper. Add the chicken; turn to coat. Cover and refrigerate at least 4 hours.
Preheat the oven to 400°. Blend the butter with the dates and lemon juice and season with salt and pepper.
Remove the chicken from the buttermilk and pat dry. Season with salt and pepper. In a large, ovenproof nonstick skillet, heat the olive oil. Add the chicken breasts and cook over moderately high heat until browned on the bottom, about 3 minutes. Turn the breasts and roast them in the oven for about 10 minutes, or until just cooked through. Serve with the date butter.
NOTES ONE SERVING 291 cal, 11 gm fat, 4.7 gm saturated fat, 5 gm carb, 0 gm fiber.

Good question. I was planning on doing breakfast for dinner, my DS had requested it, but he just told me he won't be around for dinner tonight.

Soooooo, I'm up in the air. It's starting to snow, we are suppose to get a few inches and DH= and I have a bad habit of going out to dinner when this happens.

Chili and cornbread with a green salad of some sort. We had our first wet snow here today, so I wanted something warm and tasty.

I was going to make grilled chicken salad but now I think I will make grilled chicken salad wraps with some sort of greek/yogurt dressing.

Was planning on making the Winter Greens Pizza from Rachael Ray's 1st 30MM book, but my roomie just informed me that she is making stuffed shells. So much for my plan to use up that bag of baby spinach.:rolleyes: Maybe lunch tomorrow...

Corn and Crab Chowder--also a Rachel Ray recipe--it's so fast and good! Plus lots of leftovers for lunch this week. Other than that, just some herb bread from Whole Foods, nothing special:)

1 tablespoon vegetable oil or extra-virgin olive oil, 1 turn of the pan in a slow stream
2 tablespoons butter
2 all-purpose potatoes, peeled and diced
2 ribs celery, chopped
1 medium yellow onion, chopped
1 small red bell pepper, seeded and diced
1 bay leaf, fresh or dried
Salt and freshly ground black pepper
1 tablespoon Old Bay seasoning blend, found near seafood department or, on spice aisle in your market
3 tablespoons all-purpose flour
2 cups vegetable or chicken stock or broth
1 quart whole milk
3 cups corn kernels, scraped fresh from the cob or, frozen kernels
8 ounces cooked lump crab meat, fresh is available in plastic tubs at many fish counters
4 small bread boules, 6 inches, hollowed out, preferably sour dough, optional

Toppings:
Oyster crackers
Hot cayenne pepper sauce
Sliced scallions

Heat a deep pot over moderate heat. Add oil and butter. As you chop your veggies, add them to the pot: potatoes, celery, onion, and red bell pepper. Add bay leaf to the pot. Season vegetables with salt and pepper and Old Bay seasoning. Saute veggies 5 minutes, then sprinkle in flour. Cook flour 2 minutes, stirring constantly. Stir in broth and combine. Stir in milk and combine. Bring soup up to a bubble. Add corn and crab meat and simmer soup 5 minutes. Adjust the soup seasonings. Remove bay leaf. Ladle soup into bread bowls or soup bowls and top with oyster crackers, hot sauce and sliced scallions.

Meat sauce on whole wheat angel hair and baby spinach salad

There is also a butternut squash calling my name from the counter. I have been eating these like crazy. They are so good! I wonder if meat sauce on top of butternut would be good? LOL.

Us too! Everyone in my family likes them so we have them often.

I am stealing Rosie_one's idea...Chili sounds so good. It is still warm here but I'm not waiting for cold...Chili it is!!!

Lisa---3 out of 4 of us like them. LOL. My son doesn't but will happily eat just about any other vegetable so I just give him raw cauliflower or carrots or something like that. We have been having them at least twice a week if not more. YUM.

My class just got cancelled, so it looks like I'll be snowed in eating this weekend's leftovers...Feta Mashed Potatoes (CL) and Bacon-Maple Brussels Sprouts (GH).

Leftover Barley, Black Bean and Corn Burrito's from CL Slow Cooker Cookbook. I'll be eating these for the next several nights as it made enough for about 12 and there is just me. :rolleyes: :D :cool:

Linda---I really enjoy them the most just roasted in the oven. Cut in half and cook until done. I season with Smart Beat FF butter, basil, salt and pepper and sometimes cinnamon.

Same here- I'm making mine in the slow cooker. No meat this time, just cheese. :)

We're having Black Bean Chilaquile from Low Fat Moosewood with some roasted Kabocha squash on the side.


Varaile - I'd love to see the slow cooker recipe you posted! I don't have that cookbook, and am always looking for veggie slow cooker recipes!

Americana Pot Roast is in the oven, almost done. Some other green vege to go with it, broccoli probably.

Might make some noodles to have with it since I forgot to make bread today and we are out.

We're having a let's stop at the store and find something dinner--sauteed strip steaks, roasted brussel sprouts, and baked potatoes. Fast, no recipes, and no one stuck in the kitchen for long!

Carol--Could you post the Pesce al Forno WW recipe? I am always looking for new things to do with fish that are also on WW.

Well, we're going to have from scratch red beans cooked with a ham hock (from the other night) and onions.

I'm also going to try a sausage soup recipe posted by Kingwell on the November Soup thread, using swquilt's sausage.

We'll probably have some roasted beets and carrots too.

I would love the Canneloni and Risotto recipe sometime Missindi!

We are having Clam Chowder, Salad and Bread...not too exiting but I am still catching up after my whirlwind tour of T.O. and environs!:)

Well, I know I'm one day early, but tomorrow I just don't have the time for....LATKES! So tonight was Parmesan Baked Tilapia , roasted brussel sprouts, latkes, and salad. YUMMY!;)

Veggie Pasta Marinara, and its mmmm, mmmm good!
No recipe, just using up odds and ends before we leave for vaction on Wednesday morning. I just sauteed up some onions and garlic in olive oil, added a few frozen broccoli florets and a handful of frozen peas, toosed in some chopped marinated artichoke hearts that were in the fridge and a can of petite diced tomatoes. Once everything got cooking together well I stirred in some feta and served with hot spaghetti. Can't wait for the leftover for lunch tomorrow!

At last, one of these threads on a night when I actually cooked! We had the Spicy Pulled Pork sandwiches from the most recent Good Food magazine (part of the Martha Stewart empire). I sauteed some diced zucchini, yellow squash, and carrots - with a little olive oil and lemon juice - as a side dish.

We had the Four Cheese Stuffed Shells with Smokey Marinara from CL March 2003, romaine salad, and garlic bread. Yummy!

Well, we had Chicken Potpie with Cheddar Chive Biscuit Topping. I didn't have any salad fixin's, so I just cut up an orange and an apple to go with it.

I ended up making turkey spaghetti, garlic bread, and a salad for dinner. And just a bit of red wine :) Turned out just fine. Thanks for all your inspiration, I think I found a couple new recipes for the rest of the week.

This is sad. Every time I see a thread like this, I'm planning the same thing for dinner: magnificent marinara from the freezer. Sometimes I vary it by serving it with meatballs over spaghetti, sometimes it's over cheese tortellini. But I'm obviously NOT very creative these days!
