Whats the difference between "finely chopped" and "minced"? I'm planning to try a recipe that calls for both methods: finely-chopped onions; minced garlic.

A mince is smaller than a fine chop. Garlic is so small you can't HELP but to "mince" it if you chop it up. Onions can be chopped coarsely or finely, they can be diced or minced as well.

Visuals may really help you at this stage in learning how to cook. Basic cookbooks like Better Homes and Gardens as well as some others have good photos and/or illustrations of what terms like "dice" and "mince" mean.
