View Full Version : Corn Syrup substituions?

I have a recipe that calls for light corn syrup and all I have is dark. I don't use corn syrup a lot so I'm not sure if they are interchangeable. Any help would be appreciated. Lisa

SYRUP, LIGHT CORN, 1 CUP you can use:
1-1/4 cups granulated sugar plus 1/3 cup water, boiled until syrupy
SYRUP, DARK CORN, 1 CUP you can use:
3/4 cup light corn syrup plus 1/4 cup light molasses
or 1-1/4 cup dark brown sugar plus 3 tbs. water

Thanks for the responses. I will try the substitution for the corn syrup. The recipe is for a cake so I don't think it will be a problem if it is sweeter. My sweet tooth says that there is no such thing as too sweet! http://www.cookinglight.com/bbs/biggrin.gif
While this substitution may work, I guarantee that the results will be almost twice as sweet. Each gram of carbohydrate in sugar is an actual sugar (on nutrition labels and in flavor). In corn syrup, there are "other carbohydrates" in addition to the sugar. Not all the carboydrates are sugars. Thus, the taste of corn syrup is not as sweet. However, I doubt that it will make much difference if there is only a small amount, and it should not affect the texture or appearance much.
