Has anyone tried the recipe for the Upside-Down Cranberry Ginger Cake from CL Dec 2004?

I made this Saturday night for guests and it was tasty. As usual, I didn't follow the instructions and it got me in a little bit of trouble. I don't have 9 in cake pans and in the past have used my cast iron pan. It made for a rather dark topping and I came very close to burning it. Timing was a bit of an issue too, again, this is my fault. I shouldn't have been trying to measure out the cake ingredients while trying to melt the brown sugar.

I made this a couple of weeks ago. I did do some tweaking as well. I did not use the ginger. It just smelled to overpowering for me. I also might reduce the amount of cranberries about 1/2 cup. It did turn out well. I brought it to work and it was gone by 9am!!

We had this cake at our Supper Club dinner last night. One would have thought that the ginger in the topping would have been overpowering, but it was surprisingly complementary to the cranberries. The cake was great and our baker, Laurie, decorated and prsented it so beautifully. Look for pictures on the BB soon!:)

I made this for a Supper Club last night and it turned out beautifully. You can definetly taste the ginger so if you aren't crazy about it, either cut it back or make a different recipe.
