I have a question on the Hot Brie Kisses. I need to take them to a party tomorrow. If I make them today will they be alright for tomorrow?? Meaning will they get soggy if they are made too far in advance??

Ann - they won't be soggy, they just aren't as good cold/room temp. The cheese isn't all warm and gooey, the pastry isn't as crisp. Can you bake them there by any chance? You can assemble them ahead of time and freeze them.

So then, I should make them tomorrow morning before I go?? I had wanted to take something that wouldn't be normal like meatballs, eggrolls, deviled eggs, sausage balls or sausage in sauce. Any other suggestions??

How about Spinach Balls. I haven't made them myself, but there have been great reviews. I am making some for a brunch this Friday at work.

SPINACH BALLS

2 (10-ounce) packages frozen chopped spinach
spinach, thawed and squeezed dry
2 cups crushed herb stuffing mix
1 cup firmly packed grated Parmesan cheese
1/2 cup butter, melted
4 scallions, chopped
3 eggs
1 dash nutmeg

Combine all ingredients in a large bowl. Shape into 1-inch balls. Cover and refrigerate or freeze until ready to bake. Arrange spinach balls on an ungreased cookie sheet and bake 10 to 15 minutes at 350º or until lightly browned. Serve with your favorite mustard for dipping.

I would go with the spinach balls and a VERY good spicy mustard as that is a lot of the flavor. The kisses NEED TO BE SERVED WARM.

Just a thought about cooking things at someone else's house. I have had people bring things that needed last minute prep and/or cooking and sometimes it is just too much of a mess and hassle. I usually plan some last minute things since I'm in my own kitchen, and would usually appreciate other people not having to get in the middle of that. Or maybe I'm just crabby.
