Has anyone tried the Roasted Vegetable Lasagne featured in this week's Cooking Light email? All the ingredients sound good but I'm wondering if it has enough flavor?

Often it seems hit or miss with CL recipes - many are too bland but this bulletin board has helped me find the best ones to try. My last 2 Cooking Light recipes attempts have been bland (chiptole mac and cheese and the pan seared chicken w/ artichokes/pasta) so I'm really looking forward to finding a recipe with lots of flavor.

I think that recipe looks really good. I haven't tried it yet, but most every CL recipe I make is wonderful. I really loved that chicken with artichokes & pasta. Did you alter it in any way? Perhaps you could add some extra seasonings to spice up the recipes.

Someone in my supper club made the Roasted Vegetable Lasagna. It was really good--loved its very fresh taste. However, she said the preparation was extremely time-consuming, so keep that in mind...

I made the Spring Vegetable Lasagne from this months issue tonight for dinner. It was actually very good. It has a very fresh, light taste, not heavy at all. At first I was reluctant to try it because it sounded a lot like the Roasted Vegetable Lasagne from last summer (June 2000?). My husband and I love the Roasted Veggie Lasagne! He always asks me to make it, but it is really time consumming.

The lasagne from this months issue is actually a lot easier. My only suggestion is to add more garlic to the milk sauce and more oregano to the cheese mixture, just to give it a little more flavor. The only other change that I made to the recipe is that I had to substitute fresh spinach for the swiss chard. Two trips to the grocery store and still no luck, so I decided to carry on and make it with the spinach instead. All in all it was very good and it had a nice big serving size. Try it and let me know what you think.

I loved the Roasted Vegetable Lasagna (as did my husband and guests the night I served it), but I only made it once - because it was so time consuming. I started it too late at night (not for dinner that night) and wound up staying up to some ridiculous hour to finish it. It was very good but I even wrote a note in the mag re: the prep time. When I saw the veggie lasagna recipe this month, I read it with great skepticism really trying to assess prep time. Haven't made it yet but glad to hear it should be quicker!
