DH is at a trade show for 6 days...Im not used to being singe...who has suggestions of what to cook just for me??????

ps I have the UTMOST respect for all you single gals....its been 2.5 days with a long quiet weekend looking at me and Im already going crazy!

I find that I don't cook when my DH is out of town. My kids are picky eaters, and I tend to cater to them instead. Or, I find that I live on wraps or other quick and easy meals. When he comes back, I am starved from not eating as well as I could, and he comes back not wanting food because he had been out to dinners and pigging out.

I usually use that time to eat food he won't eat -- seafood, chinese, stuff with mushrooms, other ethnic foods. Order out! Go to Blockbuster and rent a "chick flick" he wouldn't like. Give yourself a spa day (wasn't there something in CL about that?) Oh, I'm getting off topic here ... just fantasizing I guess...

When DH is away on a trip he teases me I won't use the stove much (its true). I will make simple things like a nice soup or bisque, a frittata or I will just switch and have breakfast for dinner.... http://www.cookinglight.com/bbs/smile.gif and...if I stay watching old movies its popcorn time!

Hi Kim,
Take this opportunity to eat one of my favorite meals... POPCORN!
Just kidding, I always cook for one, but make two servings so I have lunches for the week. It's also really easy to make a single steak, chicken breast or pork chop on the stove. I also just make roasted veggies and rice quite a bit. OR - invite a girlfriend over for a cooking night!
As for the long weekend... take advantage of it by getting a bunch of chick flicks (great opportunity for a popcorn dinner) and a great book! Oh... and don't forget a nice long bubble bath!
See... being single isn't that bad!

I agree with the others! Definitely use this time to eat foods he doesn't like! I usually rent some movies (we have completely different tastes in movies!) and after our daughter goes to bed, I crank on the VCR and have my own girls night!

The ideas are all great...part of what Ive done today is have the computer online all day, hitting the resfresh button frequently, made banana bread, walked/jogged 6 miles, caught up on mags I havent read and made a grain and bean salad posted on another thread. Popcorn is actually already on the menu for tomorrow night!
I also looked online for "spa" ideas I could do at home. My friends wanted to do girls night out, but its not in the budget at this time, so having these cheep/free ideas is wonderful!

My DH is gone a lot (stationed on a ship). A couple of weeks before he leaves, I make extra of our meals and freeze individual portions. That way I don't have to cook as much when he is gone. I find it very hard to cook dinner with a hungry two year old hanging on my legs LOL!
