I made the following recipes so far:
Fettuccini with tofu and peanut sauce
Liked this one, though I did NOT like the idea of adding raw cubes of tofu to a finished dish like this one. So I simmered the sauce a lot longer than was called for, and threw the cubes of tofu in there to cook with it (added a little more water to keep up with the simmering). Also did not use any chilis. It was very good, and another new way to eat tofu. Don't know if my bf would go for it though, but I liked it alot.

Who are we trying to kid? This was chicken stroganoff. With a shameless plug for Alouete cheesespread (I used a cheaper brand, so THERE.) It was good, and I used tequila to deglaze the mushrooms instead of white wine (seemed an ok substitution, it was the only thing I had). I just felt like it was more hassle and ingredient gathering than I would have done had I known it was just chicken stroganoff. No reason at all you couldn't add real garlic and use the traditional sour cream and some real herbs.
I'm about to make the pasta salad with shrimp, peppers, and olives. Will review that in this same thread.
