OK you guys were so great helping me tailor my brunch menu a few weeks ago, I need help again! My cousin and her boyfriend are coming over for brunch on Sunday. She is a somewhat picky eater, not very adventurous and tends to lean towards plain things. That said, what simple-but-still-wow-'em-but-easy-on-the-kitchen fare can I make? Two of the recipes I made last time were a Citrus Salad with Honey Lemon Dressing and a spinach salad with the New Hampshire Maple Mustard Dressing. I thought I could get away with making those. I asked her what types of things she likes for breakfast and the answer was "what normal people eat." She laughed when I said normal people ate the Smoked Salmon Frittata at our last brunch. Would appreciate any suggestions you have!

Would she be more comfortable with a bacon/eggs type quiche or frittata??
(I'll admit that I'm not wild about smoked salmon, but wouldn't go so far as to complain if someone else served it to me.)
How about a french toast casserole, or monkey bread? Too casual? Some of the reduced-fat recipes sound pretty good.
Or how about the Citrus Cream Cheese pull apart rolls? I keep meaning to make these every Christmas, but wind up distracted with other things.

Not a big smoked salmon fan myself, but my mom, sister, and dh all eat it -- point being, different people consider different things normal, you know? She wouldn't complain, but I know she wouldn't eat it. :)
Trying to make it more casual because it's just them coming over, as opposed to a crowd - just 4 adults and a toddler total.
A bacon quiche sounds good, so I'll go look for a recipe for it. Do you have a tried-and-true for monkey bread? Never made it before. I made the French Toast Casserole last time and it really makes a lot. Granted, our menu was pretty large last time, but I ended up having a LOT of it leftover.
Thanks for the help!

What about something like the Stuffed French Toast Souffle? I made it the night before Thanksgiving and just had to pop it in the oven in the a.m.
