Just wanted to share a wine that I believe is widely available in the US-Covey Run Dry Riesling. DH, MIL, FIL, AIL, CIL http://www.cookinglight.com/bbs/wink.gif and I made a trek to the winery in Zillah, WA today. It is just an hour south of us, but Spring has taken hold there completely - the apple and cherry trees are in full bloom, yellow jackets hovering, the treeless hills are a heather green that I would like to capture for our living room walls.
We brought back the Dry Riesling and enjoyed it with a simple dinner of Balsamic Grilled Salmon (CL 5 ingredient, 15 minute cookbook), brown rice, steamed asparagus, salad with red pepper and blue cheese.
The Dry Riesling has a honey nose and a warm apricot and vanilla taste. Mmm Mmmm...I highly recommend pairing it with early Van Morrison and a soft spring evening.....
