View Full Version : Help with luncheon menu

Right after Christmas I am helping my mother host a luncheon at her home for 20 Red Hat Society ladies. There is not enough table space for a sit down meal. I am trying to come up food ideas that would appeal to older crowd ( tried wraps once and that did not go over well). Most of the ladies are in their 70's. I am thinking of things that could be eaten from a good quality paper plate and that do not require silverware.

This is what I have so far - any suggestions would be great

Blue Cheese Biscuits ( an appletizer type thing)
Chicken Salad in finger rolls
Egg Salad on date nut bread
Ham and Swiss on rye - honey mustard
Potato Chips
Pickles and olives
2 pans of bar cookies
Hot mulled cider

What about tea sandwiches? In Martha Stewart's Hors D'Oeuvres Handbook, she has a couple tea sandwich suggestions: Serrano Ham, BLT, Goat Cheese and Chive, Prosciutto and Port-Fig Butter, Curried Egg Salad, Tarragon Shrimp Salad, Lemon Crab Salad, and Smoked Salmon. Let me know if you need any of the recipes. I think they would be perfect for a ladies luncheon, particularly for the older set, though skipping the Curried Egg Salad one. They look pretty, are simple to make, no silverware needed. Hope this helps!

P.S. Can you post your recipe for the Blue Cheese Biscuits?

I might add some kind of fruit...apple slices with dip, small bunches of grapes, or even little fruit kabobs. Kabobs would allow you to use other fruit such as pineapple or melon and still stick with the "no utensils" guidelines.

A veggie platter with dip also might be an idea, if you didn't want to do fruit.

The rest sounds great!

Blue Cheese Biscuits

1 10oz package refrigerated biscuit dough
1/3 cup butter, melted
5 oz blue cheese, crumbled

1 Preheat oven to 400. Lightly grease a 9 inch pie plate with non stick cooking spray.

2 Slice each biscuit into quarters, arrrange them in the prepared pie plate. Pour melted butter over the biscuits, then sprinkle the biscuits with blue cheese

3 Bake for 8 to 10 minutes
