I've lost my recipe for Watercress Lentil Salad. Does anyone have it? It had a wine winegar dressing I think and watercress, lentils and feta chees? Thank you

This doesn't have watercress, but it has lentils, feta, and wine vinegar. Hope this is the one you wanted.

Tangy Lentil Salad
Recipe By :Cooking Light Magazine. May 2000. Page: 190.

2 cups water
1 cup dried lentils
1/2 teaspoon salt
1 bay leaf
1 cup diced seeded peeled cucumber
1/2 cup diced celery
1/4 cup diced red onion
1/4 cup orange juice
2 tablespoons white wine vinegar
4 teaspoons Dijon mustard
1/2 cup (2 ounces) crumbled feta cheese
1. Combine the first 4 ingredients in a medium saucepan. Bring to a boil; cover, reduce heat, and simmer 25 minutes or until tender. Drain well; discard bay leaf.
2. Combine the lentils, cucumber, celery, and onion in a medium bowl. Combine orange juice, vinegar, and mustard; stir with a whisk. Add to lentil mixture. Stir in cheese. Cover; chill thoroughly. Yield: 4 servings (serving size: 1 cup).

Laura B - Not sure if this was the recipe that lindajones wanted but thanks for posting it! I made this today and it was wonderful! With all the posts on good carbs/bad carbs, I want to try and incorporate more healthy carbs into my diet and this recipe is a start!
The recipe did call for white wine vinegar but all I had on hand was rice vinegar and cider vinegar. Which would have been the better substitution? I forgot to bring along the recipe to the grocery store but did manage to remember to buy all the other ingredients! Thanks again.
