I am always looking for interesting vegetable side dishes and I came across this one a few days ago. On the BB there seems to be quite a few fans of roasted vegies that I thought I would share my lastest find with all of you. Here is the recipe as it was written. I made a few changes because of personal taste and also what I happened to have on hand.

ROASTED CARROTS IN 5 SPICE POWDER
3-lbs carrots
1 tablespoon Chinese 5 Spice powder
4 tablespoons of olive oil
1/4 cup of honey
1/2 cup of pine nuts
1 bunch of cilantro
Salt and pepper
This recipe didn't have very detailed instructions but here they are....
Preheat oven 400*
Toss carrots in oil, 5 spice powder, salt and pepper. Roast carrots until tender (10-15 mins).
toss with honey, pine nuts and cilantro.

I had about a pound of baby carrots in the fridge. I tossed them in a little oil and 5 spice powder to taste. I roasted them until slightly browned but still had a bite to them. I then tossed them with honey to taste and toasted sesame seeds (I didn't have pine nut and I am not a fan of cilantro). Give them a try. They smell great while they are cooking.

Sounds interesting, and I think I'd try them with sesame seeds anyway. Can't say about the cilantro. Thanks for sharing.

Thanks, this sounds great. I love 5-Spice and I love cilantro.
