View Full Version : Cinnamon Rolls?

I can't find a recipe that I made years and years ago. I have no idea where I found it, but I do remember it was fantastic. It's basically a cinnamon roll, but with the frosting on top, like at that Cinnabon shop. I tried searching Epicurious for one with frosting, but I keep coming up with "sticky buns", with the caramel on the bottom that you turn over. Is there another name for what I'm looking for? Really, what I need is a recipe for the frosting as I've got a pretty good "roll". I remember it had orange in it.... any thoughts on what the correct name is? Thanks for you help!

Here are 2 recipes I have in MC. I haven't made either. You could always add a little orange juice and orange zest to the frosting.

Cinnabon's for the Bread Machine
Recipe By :

Amount Measure Ingredient -- Preparation Method

1 c. milk
1 egg -- beaten
4 Tbsp. melted butter
4 Tbsp. water
1/2 box instant vanilla pudding (3.4 oz. box)
4 c. bread flour
1 T. sugar
1/2 t. salt
2 1/2 t. bread machine yeast
Filling:
1/2 c. butter -- softened
1 c. brown sugar
2 t. cinnamon
1/4 c. chopped walnuts -- opt.
Cinnabon Frosting: (see note)
1 lb. Margarine
1 lb. cream cheese
2 lbs. powdered sugar
2 tsp. lemon juice
2 tsp. vanilla extract
Place all ingredients in your machine in order recommended by your machine's manufacturer.
Place the pan in your machine. Select the dough cycle and press start.
When cycle is finished, remove the dough, knead enough to punch down and roll to 17X10.
Combine first three filling ingredients and mix well. Heat in microwave 10 sec. to make it spreadable.
Spread over rolled out dough with rubber spatula. Get as close to the edges as possible. Sprinkle nuts over dough.
Starting with widest end, roll the dough into tight log. Cut into 1/2-1" slices.
Place in a lightly greased 9x13 baking dish with sides.
Put in warm draft free place and allow them to raise until double.
Bake at 350 for 15-20 minutes. When the rolls are done top with frosting.
For icing, allow margarine and cream cheese to reach room temperature. Beat cream cheese and margarine together in a bowl with a mixer. Slowly add in all powdered sugar. Once all of the sugar is in the bowl mix for at least an additional 12 minutes. When almost done, add in the extracts.
NOTES : These turn out great and are so easy. Although I cut the frosting recipe in half and had plenty left over.
For my bread machine, cut the dough recipe in half.

Cinnabon Cinnamon Rolls

DOUGH
(bread machine-- recipe)
2 eggs -- room temperature
1 cup warm milk
1/3 cup melted margarine
1 teaspoon salt
1/2 cup granulated sugar
4 1/2 cups bread flour
2 1/2 teaspoons bread machine yeast
FILLING
1 cup packed brown sugar
2 1/2 tablespoons makara cinnamon -- (cinnabon brand)
1/3 cup softened butter
CREAM CHEESE ICING
4 tablespoons softened butter
3 ounces cream cheese
1 1/2 cups powdered sugar
1/2 teaspoon vanilla extract
1/8 teaspoon salt
Note: These are most like the original when using Cinnabon's own brand
of Makara Cinnamon - available at any Cinnabon Stand.
Dough
Add ingredients in order listed to bread machine baking pan.
Insert pan into bread machine and start "dough" cycle on machine.
When dough is done, turn out onto floured rolling board and allow
dough to rest for ten minutes. Roll dough out into a 16" wide and 21" long rectangle,
with a dough thickness of about 1/4 inch.
Filling
Combine brown sugar and cinnamon in a bowl until well mixed.
Spread softened butter over the surface of the dough and sprinkle
sugar-cinnamon mixture evenly over the dough surface.
Roll dough jelly-roll fashion along the 16" wide side of the rectangle.
Cut dough roll into 12 slices. Place 12 rolls into a 9" by 13" baking pan and
bake at 400 degrees for approximately 15 minutes or until light brown on top.
Remove baking pan and allow to cool.
Cream Cheese Icing
Combine in a mixing bowl until well blended.
Frost cinnamon rolls with icing while rolls are still in the baking pan.

Thanks so much Linda! I think either frosting would work. I found one similar on Foodtv.com, it's like the first one. I think I will do that and add a bit of orange. That's going to be for Christmas Morning.....
