DH wants a cheesecake for Christmas dessert. Instead of making one big cheesecake, I want to split it into little ones. I am using Alton's recipe for a 9-inch. Should I divide the batter etc. into 2 or 3 4-inch pans? I am leaning towards 3 as I know my 4-inch pans are about 2 inches deep and Alton calls for a 9-inch wide, 3-inch deep pan.

Molli, I would check the volume of the 4-inch pans and compare it to the volume of the larger pans. Just pour water in, and measure how many cups it holds. According to baking911, the 9x3 pan should hold 12 cups, so if the 4-inch pans hold around 6 cups then 2 should be fine, 3 if they hold closer to 4 cups.
