LAZY DAISY CAKE
April '01 issue
This was a VERY quick and VERY easy dessert. The "streusel-y" type topping is delicious. It is NOT a coffee cake, though (and it doesn't claim to be!) - but w/ that topping, I think that's what I expected. It is a very moist, tender and tasty cake. It didn't last long, and we rated it a "6 or 7" out of 10!

I've been eyeing this recipe but also figured it looked like a coffee cake - do you mean that its more moist than a coffee cake would be? Is this the one with the white bread used in the topping? I only have wheat bread - would that make it terrible do you think?

No white bread in the topping. You must be thinking of another recipe?
Yes, it is moist, a typical cake. Not the density/texture of a coffee cake. But still yummy!

I must be thinking of another one - there were several cakes in that section on buttermilk and one of them had a bread crumb type topping that had white bread in it. I remember the Lazy Daisy cake sounded good though and I have some buttermilk to use up so maybe I'll give it a go.

I made this last night to bring to a meeting this morning. Everyone loved it and asked for the recipe. It is very very moist, and I would agree that it isn't a coffee cake, but I would also say it isn't a "dessert" type cake either. I am not sure there's a word for it really!
Anyways, the topping calls for coconut and walnuts; I omitted the coconut because I don't like it and I subbed pecans for the walnuts. it was v v good! I'd recommend it for sure and it is VERY easy to throw together. This cake will make a buttermilk convert out of anyone!
It would be a good mid-morning snack on Thanksgiving if your family doesn't eat until late (like mine;we never eat til 7 ish and don't have lunch so appetites are at the max). Come to think of it, I think I will do that!

Lazy Daisy Cake

Cake:
2 tablespoons butter -- softened
2/3 cup granulated sugar
1 teaspoon vanilla extract
2 large eggs
1 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup low-fat buttermilk
Cooking spray
Topping:
2/3 cup low-fat buttermilk
1/2 cup packed brown sugar
2 teaspoons butter
1/2 teaspoon ground cinnamon
2/3 cup regular oats
1/4 cup shredded sweetened coconut
3 tablespoons coarsely chopped walnuts
1. Preheat oven to 350 degrees.
2. To prepare cake, beat 2 tablespoons butter, granulated sugar, and vanilla in a large bowl with a mixer at medium speed until well-blended. Add eggs, 1 at a time, beating well after each addition. Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour, baking soda, and salt in a medium bowl, stirring well with a whisk. Add the flour mixture to the sugar mixture alternately with 1/2 cup buttermilk, beginning and ending with flour mixture; beat well after each addition. Pour the batter into an 8-inch square cake pan coated with cooking spray. Bake at 350 degrees for 25 minutes or until a wooden pick inserted in center comes out clean. Cool in pan 10 minutes on a wire rack.
3. Preheat broiler.
4. To prepare topping, combine 2/3 cup buttermilk and next 3 ingredients (2/3 cup buttermilk through cinnamon) in a small saucepan over medium heat. Bring to a boil. Stir in oats; cook 1 minute. Remove from heat; stir in the coconut and walnuts. Spread the topping over cake. Broil for 2 minutes or until lightly browned. Yield: 9 servings.

NOTES :
A broiled topping of sugar, coconut, and walnuts makes for a unique and delicious snacking cake. To caramelize the topping evenly, place the cake on the second rack from the top of the oven when broiling.
