View Full Version : Fast and YUMMMYY Mexican Pizza!!

My resolution is to be better about having "fast food" around that is easy to make.

SO, tonight I made a Mexican Pizza.

This is the crust I used (I keep some in the freezer)



Wolfgang Puck's Whole Wheat Pizza Crust

Try this robust dough in place of my regular pizza dough. The honey brings out a wonderful, rich flavor in the crust.

Makes enough for 4 7-to-8-inch pizzas I make 2 large pizza crusts

1 package yeast
1/4 cup warm water
1 tablespoon honey
3 3/4 cups whole wheat flour
1 cup cool water
1 tablespoon olive oil
Pinch salt

1. In a small bowl, dissolve the yeast in the warm water. Add the honey and let sit for 5 minutes, until foamy.

2. Put the flour in a food processor fitted with the stainless-steel blade. Mix the 1 cup cool water with the olive oil and salt. With the motor running, pour the olive oil mixture and the yeast slowly in through the feed tube. Process until the dough forms a ball that rides around on the blade.

3. Transfer the dough to an oiled bowl, cover with plastic wrap, and let rise until double in bulk. Punch down the dough and knead it on a lightly floured surface for 1 minute. Divide the dough into 4 equal portions and roll them into tight balls. Place on a tray, cover with a damp towel, and let rest for several hours or overnight in the refrigerator before use.

4. Roll or stretch each ball of dough into a 7-to-8-inch circle. Place the circles, one at a time, on a wooden peel or on a baking sheet and build the pizza as desired.



I rolled it out as thin as I could then cooked it at 350 for 5 minutes then added:

1/2 - 3/4 can refried black beans, warmed then spread on dough

1/2 red onion, vertically sliced and sauted
2 cloves garlic, sliced and sauted
some frozen corn, thawed, and sauted

1 1/2 cups monterey jack and sharp cheddar cheese

Bake at 350 for aprox 10 minutes, then take out and add

Chopped cilantro

then put back in a 500 degree oven for approx 5 minutes until crispy.

It was YYYUUUUMMMM!!!! SO fast and easy!

Thanks for posting, it looks great! I've been looking for a WW crust.

Is this recipe in his cookbook:D

I dont know. I found it on his website http://www.wolfgangpuck.com/

I made double the recipe and froze three dough balls. I am also going to try his white flour crust.

Made this for supper last night, and we really liked it. I cheated and used refrigerator pizza dough, but otherwise made the recipe as is. I liked mine with a little salsa on top, everyone else ate it straight. Took the leftovers to work for lunch, and had several people asking me about it. I bet it would work well on flour tortillas too. Thanks for sharing!

Any hints to pass on about freezing and then thawing the dough balls? That sounds like a great make-ahead strategy.

Thanks for the 100% whole wheat dough recipe! Glad to know one exists that tastes good! :)

I wrap them in plastic wrap, then put them all in a freezer bag. To thaw, I put them in a covered bowl or container on the counter :)

Thanks, Kim. I think you just decided what we're having for dinner tonight - with modifications to fit what we have on hand. I think I'll throw on some chicken and see what else we have lying around.

Well, the pizza was very good, but I kept thinking about Kim putting corn on hers and how good that would have tasted on ours. :)

I sauteed a little onion and garlic in the pan where I had cooked my chicken and then put in a can of black beans. I added some cumin, ground chipotle, salt, cayenne and some green chilies. We had the "refried beans", chicken, cheese and black olives on tortillas (I needed to use them up, so I didn't make any pizza dough).

It was very tasty, but next time I'd like to have some corn and maybe some red bell peppers to add to it. Yummy. :)

Make sure you saute the corn first, to give it a nice toast! YUMMMM!!!!

Yes, the sauteed corn was very good! Red bell peppers sound good, too. Guess I'll have to make it again! :)

Kim, the white flour crust is great and so easy. I am going to try the wheat next time I make pizza.
