I've seen this salad mentioned in other posts and am most interested in making it for Easter lunch. I did a search and didn't find the recipe. I searched through my cookbook and magazines (only subscribing since last year http://www.cookinglight.com/bbs/frown.gif ) but haven't found anything! WOULD REALLY APPRECIATE IF SOMEONE COULD POST THE RECIPE! It sounds wonderfully light and tasty. Just what the in-laws ordered! TIA

Curried Chicken Salad With Peas

INGREDIENTS FOR 4 SERVINGS:
1/3 cup plain fat-free yogurt
2 tablespoons light mayonnaise
1 teaspoon curry powder
1/8 teaspoon salt
Dash of ground red pepper
8 ounces ready-to-eat roasted skinned, boned chicken breasts, cubed
1-1/2 cups diced Red Delicious apple
1 cup frozen green peas, thawed
1/2 cup thinly sliced celery
2 cups shredded romaine lettuce
2 tablespoons coarsely chopped dry-roasted peanuts

INSTRUCTIONS:
Preparation time: 20 minutes

1. Combine first 5 ingredients in a large bowl; stir well. Add chicken, apple,
peas, and celery, tossing to coat. Stir in lettuce; sprinkle with peanuts.
Yield: 4 servings (serving size: 1-1/4 cups).

Did you find this using a search or did you type the recipe in? If you did a search, I want to know where you found it!

Hi Debg -
