Very rich sauce. My only complaint would be that the serving sizes seemed a bit stingy. My husband thought it could have used a bit more red pepper, but he's a total fire eater, so what does he know? http://www.cookinglight.com/bbs/wink.gif I think next time I'll add more veggies and just use a pound of shrimp so the servings are bigger. And there will definitely be a next time.

I used the rest of the can of light coconut milk as part of the liquid for the rice, and it turned out really well.

I discovered this recipe while looking through the 2002 annual - I must have missed it in the magazine, which is a shame, because I thought it was outstanding!! Very easy to make, very richly flavored.

The recipe called for cooking it in the microwave, which seemed silly to me, because it looked like either their times were way off, or it would just be quicker to cook it on the stove (i.e. the recipe said to microwave the shrimp for 8 minutes, when I knew they would cook in 3-4 minutes on the stove). I also added much more cayenne pepper than the recipe called for, because I like things spicy.

I really loved this recipe, it is a repeater!!

I am perplexed on what would be a good side dish.
Asparagas? Broccoli? Seems like it needs something green? I have the hardest time w/ethnic pairings...

Funny you resurrected this, Luv2Cook, because I just put this on my menu again for this week. I am horribly side-dish impaired, so last time I didn't serve it with any side dish at all. :p This time I was going to serve it with steamed broccoli. Not a very exciting answer, I know. But the dish is so strongly flavored, I don't think you would want your side dish competing with it.

as much as I hate to agree with you, you're probably right; but I might season it w/a little Penzy spice...
