Don't remember who it was on the old board that asked for Caribbean-themed recipes. Well, here is the Painkiller (great for sipping poolside or on board your very own yacht!), as promised:

Pusser's Pain Killer

Amount Measure Ingredient -- Preparation Method

1 ounce Coconut Cream (Coco Lopez)
4 ounces pineapple juice -- chilled
1 ounce orange juice
4 ounces Pusser's Rum
5 to 6 ice cubes
4 oz. crushed ice
Nutmeg -- sprinkled on top, optional

Combine Coconut Cream, juices, rum and ice cubes in a shaker and shake vigorously. Put crushed ice in a chilled 14-oz. tall glass and strain. Optional: Sprinkle nutmeg on top.

It was me looking for the Caribbean recipes, and yours definitely sounds delicious.

Right now I'm trying to come up with a bananas foster cheesecake recipe to serve with a caramel rum sauce for dessert (not having the best luck). You may have inspired me to switch to "pina colada" mode! http://www.cookinglight.com/bbs/wink.gif
