I am planning to use my brand new shiny red slow cooker for some chili on sunday for some friends and plan on making the yeasted corn bread from the dec. cl issue (has anyone tried it yet??). My question is, I'd like to make a dessert, I think using chocolate, but I'd like something fairly light, simple, and something that won't involve leftovers (after too many christmas treats...). I was thinking of individual desserts, (there will probably be 3 of us) but I don't own any ramekins or anything like that. Does anyone have ideas?

Here's a link to a thread reviewing the Yeasted Corn Bread (http://community.cookinglight.com/showthread.php?s=&threadid=67253&highlight=corn+bread) . Seems like the reviews were a little mixed. If you don't want to go with that, you could make the Cornmeal Scones (http://community.cookinglight.com/showthread.php?s=&threadid=64248&highlight=cornmeal+scones) which got great reviews.
For Dessert the Chocolate Eclair Icebox Dessert comes to mind. You could make a half recipe, and leftovers freeze well.

I second the Icebox Eclair Dessert, and it's also great to know it freezes well, 'cause it's hard to halve the recipe!
I was looking for the exact same kind of dessert for New Year's Eve. Something simple and chocolate and something that I wouldn't have lots of leftovers. I finally decided on the Fresh Raspberry Truffles from the December issue of Gourmet. They are fresh raspberries coated in chocolate and then rolled in cocoa powder. I was going to save the recipe for Valentine's Day but decided that they were exactly what I wanted for New Years. The recipe calls for fresh raspberries, good bittersweet chocolate, framboise or brandy and cocoa powder. Very simple although I do realize that fresh raspberries are going to be an investment at this time of the year. :rolleyes: I'm sorry I don't have the recipe with me to post.
