I want to make the florentine frittata but it calls for a 10" cast iron skillet because it goes in the oven under the broiler. It also says I could use a non-stick skillet. Can I use ANY non stick skillet as long as I cover the handle with foil?

Comabri: Check your manufacturer's literature since some skillets can withstand certain temperatures. The Calphalon non stick skillets can go to the oven to up to 450 degrees

i have used "circulon" in the oven before with no problems just wrapped the handle in foil.but since then, i have gone to kmart and paid $9.99 for a decent size "Lodge" cast iron pan which i love dearly..

Be careful, while some pans can take heat of 450º the broiler is over 500º! How much you paid for that pan and how much you like it will determine if you're ready to sacrifice it to the broiler or go buy a cast iron!
