View Full Version : REVIEW: Pasta Jambalaya (CL COMPLETE)
This was a winner! I made this last night and not only was it quick and easy, but it was delicious. It is on the spicier side, so if you don't like spicy maybe you could use the mild Rotel tomatoes. I used whole wheat penne and added extra onion and red bell pepper. I let it simmer a good bit longer than the recipe says so that it would thicken.

I went home last night and wanted to make an easy pasta dish. Then I remembered this review and decided to give the recipe a try. Hubby really liked it. He went back for a second helping (that's the true test). He'll eat anything, but when he goes back for more, I know he really likes it. It was very easy to make, too. I had most of the ingredients on hand, minus the cajun seasoning and the bell pepper. I added a bit more garlic (have to!!) and mixed the cheese in so the sauce was a little creamy.
What a great cookbook this is!
