I made this a while ago, and while it was reasonably tasty (how can you go wrong with ww pasta and arugula?); I did find it to be fairly boring. Big case of the blah; I could created something much better myself http://www.cookinglight.com/bbs/smile.gif

This recipe has become one of my staples; in fact, I just made it again last night, but with dandelion greens instead of the arugula. I think the "bite" of the greens, the warmth of the garlic, the saltiness of the cheese, the piquancy of the tomato, and the earthiness of the whole-wheat pasta all come together in a rich complex of flavors that lasts in the mouth for a long time. I'd call the dish "subtle" rather than "bland" -- there are some strong tastes in the mix, but they meld into something less strong than the component parts. This is a dish to be savored rather than wolfed down.

Wow, Phoebe, I'd say you've got a career as a food critic ahead of you!
I also liked this recipe, and will definitely repeat it. The only thing I found is that it is much better when it is freshly made; leftovers weren't as enjoyable.

We had this for dinner tonight and my mouth is still happy thinking about it! :p DH was equally pleased. I served it with garlicky green beans (thanks Jewel!) I did substitute balsamic vinegar for the red wine vinegar, because I was out of the red.
We will definitely make this again (esp. since the public market sells huge bunches of arugula for $1!)

We liked this one, although I punched it up with a little extra of everything. In fact, I think this recipe was my first foray into the wonderful world of whole wheat spaghetti.

This recipe is a staple in our home as well. I can get arugula at the farmer's market for a $1 too. VERY yummy. I think I will try it with dandeloin greens next time per Phoebe's suggestion.
