I can't seem to find the chicken with barley recipe so many of you said is so good. Could someone please point me to the right issue? Thanks

Joyce, the Smothered Chicken and Barley recipe is in the Jan/Feb 98 issue. I haven't made it yet, but have plenty of frozen thighs from trying to get there! I keep forgetting it takes l hour to simmer and keep trying to start it late in the evening!

Smothered Chicken and Barley
serves 6 (l high, l c barley mixture, l Tbs green onions)
l tsp ground cumin
3/4 tsp chili powder
l/2 tsp salt
l/2 tsp ground cinammon
l/2 tsp dried mint flakes
l/8 tsp garlic powder
l/8 tsp ground red pepper
6 4-oz chicken thighs, skinned
l/2 tsp veg. oil
cooking spray
l l/2 c. chopped onion
l c chopped red bell pepper
l Tbs low-sod. soy sauce
3 l/2 c low-salt chicken broth
l l/4 c uncooked pearl barley
l l4.5-oz can diced tomatoes, drained
6 Tbs chopped green onions
Combine the first 7 ingredients in small bowl, rub chicken w/half of spice mix.
Heat oil in large nonstick skillet coated w/cooking spray over medium-high heat. Add chicken, cook l min on each side til browned. Remove chicken from pan.
Recoat skillet w/spray, add onion, pepper, soy sauce--cook over med-high 3 min. til vegetables are lightly browned. Add broth, barley, tomatoes, and rest of spice mixture, stir well. Add chicken to skillet, nestling into veg. mixture. Bring to a boil, cover, reduce heat, simmer 55 min or til chicken is done. Let stand l5 min. Sprinkle w/green onions.

We had this for dinner last night. It was very good, a good change of pace from rice. The spice combination was great and it smelled wonderful as it simmered. I rarely repeat recipes, but if I did, I would make this again.
