View Full Version : ISO....Low Carb Dessert

Hello, I am completely lost when it comes to dealing with a factor aside from just low fat...My mother-in-law called me and is requesting a low carb dessert to prepare for her friend...I'm not sure what constitues "low" carb, and was hoping you all could help me out....I would love any tried and true recipes that fit the bill....She is a basic baker, so won't have any ingredients that could only be found at a health food store...thank you all so much http://www.cookinglight.com/bbs/biggrin.gif

My opinion only, but when I was trying to follow more of a low-carb diet, the 'keep away' foods were sugars and bread-like carbs. The best dessert I ever made was a cheesecake made with Splenda, which is a lowcarb sugar substitute. Crust was made from cookie or graham cracker crumbs, but there wasn't enough to really make that big a difference! Splenda is right next to the Sugar Twin and Equal at the grocery! Just pick your favorite cheesecake recipe and make some substitutions!

Have you tried the on-line search - if you scroll down to the bottom there is a Special Diets section that allows you to choose Low Carbs. What comes to mind to me is nuts...

What about a fruit based dish- a fruit cobbler or poached pears or apples? I just read an article about people with high glycemic indexes who are on low-carb diets (ones which eliminate white sugars, white breads and pastas, white potatoes) because of their high GI. For desserts they suggested fruit-based dishes.

There is a long thread on this BB about CL's Mixed Berry Cobbler from the March 2001 issue. It is delicious. That same issue also has a poached pear recipe.

Julie, the "person" you describe is exactly the type this dessert is being served to...I also thought of fruit as a good low carb, low sugar dessert...I think I will suggest the Mixed berry cobbler...thank you... http://www.cookinglight.com/bbs/smile.gif


Jewel, I did do an online search and saw these cheesecake recipes made with splenda, I was wondering if they were any good...I will also give this recipe to her as an option...thanks for the suggestion...I also saw a few with cocoa added, making a choc. cheesecake...yum!

Kim, yes I did do a CL search under low-carb, I really did not see many that I thought she would be interested in...I think I did copy the strawberry with lemon curd or something like that...thanks though...
