I have a really easy recipe for Monkey Bread. Not exactly light, but it is very quick and easy to make.

Monkey Bread

4 tubes buttermilk biscuits
2 cups sugar, divided
1 1/2 tablespoons cinnamon, divided
1 stick margarine

Cut each bisciut into 4 pieces. combine 1 cup sugar and 1 tablesppon of cinnamon in a plate or a plastic bag. Roll or shake each biscuit piece in sugar mixture. Layer the sugared pieces in a greased tube pan. Sprinkle the remaining sugar over the top.

Combine margarine, 1 cup sugar, and 1/2 tablespoon of cinnamon in a small saucepan; heat until boiling. Pour over biscuits in pan.

Bake at 340 for 40 - 45 minutes. Let cool 5 - 10 minutes. Loosen sides and invert on serving plate. Serve hot.

Not sure how far in advance you're talking about but I have assembled this the night before and put in the fridge then baked the next morning...adding the syrup mixture in the morning.

Oh, my goodness -- my twenty-something kids make something called Monkey Bread. I have some notion that they use frozen roll dough, lots of butter and brown sugar and who knows what else. I've never seen the final product. I thought it was just something those crazy college kids pass around -- not serious food. But here it is on this BB.

I love it when life surprises.

There is a Cooking Light version in their Recipe Search engine. I'm trying it for Easter Brunch.
