View Full Version : Substitution for chicken fat?

I'd like to make matza brei this week in honor of Passover. However, the recipe that has been passed down from my Grandmother uses chicken fat. I don't have any and I don't really want to use it anyway. Does anyone have any suggestions for what I can substitute in its place?

She used chicken fat to fry it? I've never heard of that. We just use some butter. You could use that and some oil or even cooking spray.

From what I've seem my mother and MIL make, neither use any fat, just eggs and soaked matzah. MY mom then fries it, with butter or oil, and my MIL bakes it, then cuts into chunks and fries it to form a crust.

Both taste good.

I make mine similarly to Julia1Pin's mother, except I fry it in a nonstick skillet with Pam. Sometimes I substitute Egg Beaters for the eggs. We're actually having this for dinner tonight, with smoked salmon and cubed cream cheese added.

Ours is similar,it just has a little vanilla milk and sugar added. And we usually do the non-stick thing, but it'd be more crispy in the butter.
