I hadnt had adzuki beans before....Ive only been eating beans for about 2 years, and I seem to be stuck with turtle and pinto....didnt know what to do with others. Those beans are AWESOME! I loved the whole recipe! It will be a staple in our home now!

Ok Kim, I have now spent 10 minutes searching for this recipe, could you or someone post the thread? We are also BEAN lovers and try to incorporate them whenever we can. TIA

Hey, kwormann -- I've been out on travel and have just now had time to sit down and see what I've been missing.
Wow, Em is running a marathon and you loved the bean recipe. I love this board and think about it when meetings get dull.
I'm so excited that you liked the recipe. Since I kind of made it up, I was nervous about you liking it. I'm pretty tolerant of my own combinations although my family sometimes rolls their eyes (but they always and good naturedly try everything I offer.)
If you haven't already, do try it with the dried cranberries. The toasted pecans are nice, too, but tend to get soggy if you leave them in the dressing.

NOt only did I like it, but I had several at work try it and ask for the recipe! PLUS DH liked it!
