Hey everyone, I am planning my Easter menu, and have realized my oven is full :EEK: I was hoping you all could help me find a tried and true crockpot recipe for Potatoes...we will be having
Honey Baked Ham
Triple Veggie Casserole
Dinner Rolls
Spinach Strawberry Salad
Mandarin Cream Delight
cold Pasta Salad
Cheesy Corn Mac

sounds a bit wierd, I know http://www.cookinglight.com/bbs/smile.gif but some of these are for the kids

You can do baked potatoes in your crock pot. Wrap each in foil and stand on end, cook on high 2-4 hours (depending on size and number of potatoes).

Or this might be good with you menu:

Crock Pot German Potato Salad

2 lbs. potatoes, sliced
1/2 c. onions, chopped
1/2 c. celery sliced
1/4 c. green peppers, diced
1/4 c. vinegar
1/4 c. oil
Chopped parsley
Sliced bacon, cooked and crumbled

Combine all ingredients except parsley and bacon. Add salt and pepper to taste. Stir and cook for 5-6 hours in crock pot. Add sugar if needed.
Garnish with bacon and parsley.

Sherry, I always do creamed potatoes for Easter and have found the crockpot works great! I make the white sauce and pour it into the crockpot and add the cooked potatoes (red). Turn the crockpot to low and the sauce stays nice and creamy and you can go about with the rest of your dinner.
