i would like to know how to keep chicken breasts from becoming rubbery when poaching them. thank you.

I have never had really good luck in poaching chicken breasts, because the breasts are the leanest cut, therefor can become the dryest cut! The only thing I remember reading was "low and slow". Very low heat and just simmer till done. Anyone else have a better plan?
