Could you please post your recipe for chicken tenders with peppers and onions?

Here you go. I haven't tried it yet but I thought it looked good. I couldn't find the frozen pepper and onion mix, so I bought just the frozen peppers and I'll add my own onion.
Spicy Chicken Tenders with Peppers & Onions
Prep time: 5 minutes Start to Finish: 30 minutes
To make ahead; Prepare through Step 1 up to 1 day ahead
* Frozen pepper and onion mix is often sold as a solution for starting a quick stir-fry. This dish combines the convenience of this blend with the speedy cooking time of almost fat-free chciken tenders. Our seasoning mix is spicy but you can create the dish with you own favorite bland. Serve with creamy polenta or grits.
1 tsp sugar
1 tsp paprika
1/2 tsp salt
1/2 tsp freshly ground pepper
1/4 tsp cayenne pepper
1 pound boneless, skinless chicken breast tenders, cut into 2-inch pieces (could sub 1 pound stir-fry beef or thinly sliced to p round steak for Spicy Beef with Pepper & Onions). (I plan on using chicken breasts since tenders were $6.99 a pound :eek: )
1 tbsp canola oil
1 16 oz package frozen bell pepper and onion mix
1. Combinze sugar, paprika, salt, pepper and cayenne in a medium bowl. Add chicken and toss to coat. Cover and refrigerate for 15 minutes or overnight.
2. Heat oil in a large nonstick skillet over high heat. Add pepper and onion mix and cook, stirring occasionally until the vegetables are very soft, 5 to 7 minutes. Add the spice rubbed chicken and cook, stirring, until no longer pink in the center, 3 to 5 minutes. Serve hot
Makes 4 servings, 1 cup each
Per serving: 196 calories, 5g fat (1g sat, 2g mono) 66mg cholestrol, 8g carbs, 28g protein, 2g fiber 392 mg sodium
