Has anyone here ever roasted a rutabaga? I've been contemplating a lovely little root vegetable dish with sweet potatoes, carrots and rutabaga, but I'm wondering how a rutabaga holds up under roasting conditions. Do they carmelize nicely?

I have had rutabagas in with other root veggies and I thought they were wonderful. They hold up well.

Roasting is my favorite way to fix them. Cut in bite size pieces and add a little olive oil, salt and pepper. 400 degrees for about 30 min. or until tender. They do carmelize nicely. Yummt!
