View Full Version : Help! Need a recipe for Easter brunch

I am having my family over for a Easter brunch. I need to come up with 1 more good thing to make. I was thinging along the lines of a casserole, or something else that I could either but together ahead of time then pop in the oven, or something that could be made ahead of time completely, then heated before eating.

I really like the Fontina, Asparagus and Leek Strata from March '99. I had it for a dinner party the other day and everyone loved it. It would make a great brunch casserole. The best part is you make it at least 8 hours ahead and let it sit in the fridge. Then you just need to bake it for 45 minutes when the time comes. Makes a delicious make ahead meal. It also is great for spring because it's very pretty.

I love serving quiches for brunch. I can make them ahead of time, as they are often best served slightly warm or at room temperature. Usually I make a variety (two or three types) -- usually a mushroom-leek quiche, a spinach quiche, and something with sausage or ham. Everyone loves them, and they are perfect served with fresh fruit and muffins!
I'd be happy to post recipes if you need them!
