I am making the Serrano Cilantro Pesto pasta (wrong name, I'm sure) from the J/F 2005 issue. Anyway, it calls for some sherry vinegar (I think 2TB?). I have sherry cooking wine and lots of different vinegars like white, white wine, red wine, balsamic, apple cider. What should I use??

I personally would sub red wine vinegar. I think the taste is pretty close.
