I bought these great organic potatoes from TJ's but don't know what temp. to bake them at and for how long.

It's always the simple things I have issues with <sigh>

It sometimes depends on the type and size of the potato, but I usually bake russets at 400F for about an hour or an hour and a quarter. At the hour mark, I test with a fork, and then go from there.

I start them off in the microwave for 5 minutes (10 if they are really large) and then finish them off in the oven. Depending on how quick I want them, they may be on 350 to 400. Just trial and error, but you really can't go wrong with a baked potato.

I think that will be my dinner tonight. They're so good, don't need any butter or oil, or sour cream. Everyone at the table loved them the last time I made them (my MIL told me the degrees and time and I forgot for today) and no one put anything on them (3 men included).

I always do this, as it's easy to remember: 450 degrees for 45 minutes.

When you start them in the microwave, how much time does it cut down on the oven phase?? I love the taste of oven baked potatoes, but for time reasons usually rely on the ol' microwave.

I usually bake mine at 350 degrees for a little over 1 1/2 hours. I prewrap them in aluminum foil, which has been heavily sprinkled with salt. Someone once told me that the salt draws the water out of the potatoes and provides for a less "mealy" potato in consistency. I don't know if that's accurate, but they always seem to turn out okay.

Thanks everyone. I made them last night at 450 for 45 minutes. And they still weren't done. My mom called, and after I complained to her, she laughed at me. My problem - I had them on the top rack. Apparently, they are supposed to go on the bottom rack. I guess that's why my potatoes always took FOREVER!! Leave it to mom. I think they took 1.5 hours at 450 last night. Next time I'll know better.

I know you didn't ask, but here's our favorite Twice Baked potato recipe : )

Cheese-Stuffed Potatoes *****
Recipe By: Cooking Light, March 1995, page 164
Serving Size: 2


Amount Measure Ingredient Preparation Method
1 lg baking potatoes (2-1/2 pounds)
1/4 cu shredded reduced-fat cheddar cheese
1/4 c nonfat sour cream
1/4 c finely chopped green onions
1/4 tsp lemon zest
Paprika

Bake potatoes at 400 degrees for 1 hour or until done; let cool slightly.

Cut a 1/4-inch-thick slice from the top of each baked potato; carefully scoop pulp into a bowl, leaving shells intact. Add cheese and sour cream to pulp, and mash; stir in green onions and salt.

Stuff shells with potato mixture, and sprinkle with paprika. Place on a baking sheet, and bake at 450 degrees for 15 minutes or until thoroughly heated. Yield: 6 servings.

Per serving: 121 Calories; 1g Fat (9% calories from fat); 7g Protein; 18g Carbohydrate; 6mg Cholesterol; 114mg Sodium
