Another use for that Key lime juice. I just finished making this fudge and it is wonderful. I could wait for it to completely cook, had to sneak a bite. Gave some to hubby, who announced...that's excellent.

Key Lime Fudge

3 cups white baking pieces
1 14 oz can sweetened condensed milk
2 teaspoons lime peel zested
2 tablespoons key lime juice
1 cup chopped macadamia nuts toasted

Line and 8x8 baking dish with foil, spray with pam lightly or you may use butter.

In large sauce pan stir baking pieces with milk over low heat until mixture is smooth. Remove from heat and stir in lime peel, juice and nuts. Spread mixture evenly over foil. Cover and chill for two hours. Lift foil from pan using edges of foil, peel away and cut into pieces.

oh, no! Just realized when I copied the recipe, I didn't toast the nuts. Oh, well, too late now. It sure tasted good anyway.

Thanks Soushi...I can see we're gonna need another trip to Key West:D My husband is drooling!

YUM! This sounds yummy and I just happen to have some key lime juice in the fridge. Did I miss a thread where folks were giving other suggestions for using the key lime juice?

Here's the other recipe I posted:
Key Limer cookie recipe :
1/2C softened butter
1C sugar
2 tsp. grated key lime peel
1 egg lightly beaten
1/2C key lime juice
3C flour
4 tsp. baking powder
Preheat oven 375 degrees. Cream tog. butter and lime peel.Beat in the egg and lime juice. In a seperate bowl sift in the flour and the baking powder.Beat dry ingredients into the batter mixture.Drop by teaspoonful onto an ungreased baking sheet.Bake 10" or until very lightly browned.Remove to cooling racks. Makes 4 dozen.Enjoy!
