Aside from cookies & breads - what other 'goodies' can you use Silpat sheets for - I purchased my first one yesterday and baked a batch of dog biscuits and turned out great, not much of a cookie maker here so just wondered other uses. I just have to mention that I paid $34.95 + 7% tax Canadian here - I know, I know, I keep going on about the prices here, but it just rocks me!

Elaine - I use the mats in just about any recipe that calls for parchment paper. I often use them for appetizers that are delicate. I even use them if the food won't stick to the pan because it's less wear and tear on my cookie/baking sheets! I've also used them when pouring out a candy mixture, etc.

I read a recommendation in King Arthur's Baker's Catalog to use the larger sized one as a kneading mat - easier to rinse off than your counter. As long as I have something sitting on the mat (my flour canister) it doesn't move while I'm kneading. It does work very well but it's so large that its really not that easy to clean and dry so I often find myself kneading directly on the counter anyway (even though I hate the work to clean the crusted dough off). I would like to order a smaller sized one.

I have a silpat question that I thought I'd throw out there. After reading the other thread about cookie sheets I finally gave in this week and bought a silpat and found a sheet pan at a restaurant supply store like someone else recommended and used them for cookies for the first time last night. It worked beautifully although there was a weird rubbery smell while they were baking. But my question is in regards to cleaning the Silpat as mine came with no instructions. After I was done you could see where the cookies had been - perhaps circles of grease or something? So at first I just wiped it with a wet sponge but that didn't get rid of the circles so then I went at it with soap and water and that didn't do it either. I'm just feeling like its not entirely clean as long as I can see those circles but I don't know - anyone know?

I can't remember if I saw this on foodtv or if someone posted this idea on the bb, but I think you can also use your silpat to knead dough on.
