View Full Version : Help! I need a shrimp and fruit salsa recipie!
I was sure that about 2 months ago I found a recipie in CL for shrimp tsoft tacos with a fruit salsa topping. It was awasome! I made it, copied the recipie on an index card and now I can't find it. Does this sound familiar to anyone? I wanted to serve it to guests this weekend.

I know the one you mean...I've never made it before, but I'm planning to this week! I know it's in one of the last few issues...it was the one with all the shrimp dishes. I'm thinking maybe the April issue? I'm at work, so I can't check...if no one has answered by tonight I'll let you know for sure!

Thanks for your response! I did a search for the recipie online but I coulsn't find it.

From April 2000, pg. 136:
Soft Shrimp Tacos with Tropical Salsa
Salsa:
1/4 cup chopped green onions
1 tablespoon chopped fresh cilantro
1 tablespoon canned chopped green chiles
1 tablespoon lemon juice
1 (11-ounce) can mandain oranges in light syrup, drained
1 (8-ounce) can pineapple tidbits in juice, drained
Tacos:
Cooking Spray
1 cup yellow bell pepper strips
1 cup vertically sliced red onion
1 garlic clove, minced
1 1/2 pounds medium shrimp, peeled and deveined
1 cup chopped tomato
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
2 tablespoons chopped fresh cilantro
8 (6-inch) flour tortillas
1 1/4 cups (5 ounces) shredded reduced-fat Montery Jack cheese
1. To prepare salsa, combine the first 6 ingredients in a bowl. Cover and chill.
2. To prepare tacos, place a large nonstick skillet coated with cooking spray over medium-high heat until hot. Add bell pepper, onion, and garlic; saute 2 minutes. Add shrimp, tomato, cumin, and chili powder; saute 3 minutes or until shrimp are done. Stir in cilantro. Spoon 1/2 cup shrimp mixture over one half of each tortilla, and top with about 3 tablespoons cheese and 2 tablespoons salsa; fold tortillas in half. Yield: 8 servings

SALSA
1/4 c chopped green onions

TACOS

1 c yellow bell pepper strips

1 garlic clove minced
1 1/2 pounds med shrimp deveined
1 c chopped tomato 1/2 tsp ground cumin
1/2 tsp chili powder
2 tab chopped fresh cilantro
8 -6 inch flour tortillas
1 1/4 c shredded reduced fat Monterey Jack cheese (5 ounces)
Prepare salsa by combining ing in a bowl, cover & chill
Prepare tacos by placing large nonstick skillet coated with cooking spray over med high heat until hot. Add bell pepper,onion, garlic & saute 2 minutes.Add shrimp, tomato, cumin, chili powder & saute until shrimp are done (3 mins). Stir in cilantro. Spoon 1/2 c shrimp mix over one half of each tortilla & top with about 3 tab cheese and 2 tab salsa, fold tortillas in half. Serves 8
