I have a new recipe for Baked Beans using a ham hock and 1 cup of 'passata' - what would you use and how much? Isn't that a rather complicated item to make in order to just add to a recipe?

You can buy it in jars in with the tomato sauce, but for your recipe you might just used crushed tomatoes in purée.
