luv2cook,

There is an excellent recipe on the CL recipe search for Smoked Salmon and Goat Cheese Frittata. I made this again Thursday night and am looking forward to the last piece for lunch. It would be great for breakfast tomorrow. And it's light!!

kvalley, is that the one that has dill and potatos? I found that just now and wanted to make sure it was the same thing - except I'm going to ditch the goat cheese - despise it

Yep, that's the one! I know it's still goat cheese, but would you be open to feta with sundried tomatoes and basil- thekind that you can get in the tubs in the deli section? It's really mild and so yummy in this recipe...

DH and I got a smoked salmon filet for xmas. Finally got around to eating it. Well, we were hungry and ambitious so we slathered the filet with lowfat cream cheese, onion and capers. We got about halfway through it and couldn't eat another bite.

Well, two hours later we were birping up salmon - yuk! Neither one of us wants to eat the rest of it but I don't want to waste it either. What could I do with it??? Any ideas?

My suggestions include you having to eat it, but here goes:

Fry up some onion, some smoked salmon, then add some beaten eggs for a yummy brunch.

Fry up some onion, fresh spinach, lemon peel, fresh dill, pepper, and smoked salmon and add to cooked pasta.

I know I've also seen recipes for smoked salmon quesadillas (I think in CL).

now that's an idea. hmmm. Eggs tom. for brunch? Gotta get rid of the evidence before SIL comes over...
