Help! My DH and IL's will want deviled eggs for Easter brunch (definitely NOT my favorite!). Looking for a recipe that may change my mind! Any foolproof ideas floating around out there???

We are having a cookout for our Easter Dinner this year...not very traditional, but with a large group and a beautiful day, it should turn out great.

I'm bringing, among other things...Deviled Eggs. I always make them the same, boil eggs, remove and mash yolks with Miracle Whip and mustard, then stuff egg halves.

I'd like to try something a little different, but don't know what. Does anyone have a unique recipe they'd like to share?

I really like a bit of paprika sprinkled on top of deviled eggs. But, to me, ANY way you make deviled eggs is delicious!!!

Here is a recipe that I honestly have not tried, but I pulled it from somewhere a year or so ago with the intention of making it. I just have not had the occasion to make deviled eggs lately.

Deviled Eggs With Curry and Cilantro

Recipe By :

Amount Measure Ingredient -- Preparation Method

8 large eggs
3 tablespoons mayonnaise
1 tablespoon curry powder
1/2 teaspoon mustard
1/2 teaspoon salt
1/4 teaspoon pepper
1 green onion -- chopped
2 tablespoons cilantro -- finely chopped


Place eggs in a medium saucepan with cold water to cover and bring to a boil over high heat. Reduce to medium-low heat and simmer for 9 minutes. Remove from heat, drain, and rinse in 2 changes of cold water. Add 12 ice cubes to the water and let cool.


In medium bowl, combine mayo, curry, mustard, salt and pepper. Add egg yolks and mix until smooth. Stir in green onions and cilantro.


Stuff each half of the eggs with 1 tablespoon of the curried yolk mixture. Serve at once or cover and chill until serving time.

Dilly Deviled Eggs

1/2 c. cucumber, peeled & shredded (1 med.)
1 tsp. salt (or to taste)
6 hard cooked eggs
1/4 c. fat-free sour cream
1/4 t. dillweed
Carrots, celery, & radish garnishes

Thoroughly combine cucumber & salt. Let stand 15 min. Drain well, pressing out excess liquid. Set aside. Cut eggs in half lengthwise,
removing yolks, setting whites on a platter. Mash yolks w/ a fork;
blend in sour cream & dillweed. Stir in drained cucumber. Refill
whites, w/ 1 T. yolk for each egg half. Garnish tray w/ assorted
fresh-cut vegetables if desired. Serves 6 (Recipe can be doubled
or tripled, etc.).

Deana- I mash my yolks with dry mustard, minced dried onions, and a pinch of Equal, then use no-fat mayo. I sprinkle on paprika and top some with a ring of sliced black or green olive, some with a spring of parsley and some with a dot of sweet pickle. I always serve the eggs on a bed of greens too. It's 45 and rainy in Wisconsin today. Not exactly deviled egg or any "picnic" food weather!

6 hard cooked eggs
1/4 c mayonnaise
1tsp vinegar
1 tsp prepared mustard
Halve the eggs lengthwise, remove yolks and mash with fork. Stir in mayo, vinegar, mustard and 1/8 tsp salt. Stuff egg whites with yolk mix. Garnish with parsley or paprika. 12
Italian style
Make as above except omit mayonnaise, vinegar and mustard. Add 3 tab creamy Italian salad dressing to mashed yolks. Stuff egg whites with yolk mixture.

Thanks everyone for the suggestions. I think I will try making a variety, using a couple of the recipes you've suggested. And...I like the idea of adding the extra garnish (we always just use paprika), that will make for an interesting tray!

Try deviled shrimp cocktail eggs. Instead of mustard, add a little cocktail sauce to "pinken" the yolks, then after filling the white halves, place a small shrimp on top of the stuffing. I use the canned kind, but if you can find small enough fresh ones, they'd be good too.

I have also seen a recipe with salsa or picante sauce added to the mashed egg yolks. I think it was a Pace recipe. I looked at their web site, but I didn't find it. Maybe someone else will have it for you, or you could improvise.

I really like deviled eggs, but I don't have a recipe. I just mash the yolks with a little mayo, some mustard, a touch of vinegar, salt, pepper and some sweet pickle relish. I just mix it to taste. I have a friend who adds finely chopped ham. Sorry, I couldn't be more helpful.

following the mayo, vinegar, relish theme, add honey mustard in place of regular mustard to the yolks. Yum!

OROROROROR you can use flavored vinegars in place of plain vinegar. I know we use garlic vinegar and it's great! Give the yolk a very nice flavor. And you can also make the reg. yolk recipe and divide in half - make half with honey mustard and say half with a flavored vinegar...I wouldn't use red wine vinegar, tho.

I have heard of adding tofu to the egg mixture-never tried it myself, though.

My DH will only eat my deviled eggs, and no one else's. He says the key is Miracle Whip, not mayo. I use that, a tiny bit of mustard, and relish. And of course, the paprika for garnish. That's it -- no salt, pepper, vinegar, etc.
