View Full Version : Quick "throw together" for eggplant - DELICH!!!

Hi everyone! I know there are so many of us that are health conscious so I figured I would throw this out to all of you.

I had an eggplant that I had bought at such a terrific price that had to be used. I could have made about 3 pizza's with it or a great eggplant parmesan or other stuff but I was short on time. So tonight after getting home on the later side with lots to do threw the following together. Boy was it good!!!

Be aware that ingredients are optional for more, less, none or you may add anything else like meat or other stuff. Also, the word "threw" is essential when doing measurements!

1 eggplant (1-1/2 LB) approx.
1 box frozen chopped spinach, thawed and strained
1 can crushed tomatoes
1 can garbanzo beans
2 handfuls of fresh basil
1 medium onion, chopped
1 carrot, sliced/chopped
2 stalks celery, sliced/chopped
4-5 shakes of dried oregano
4-5 cloves garlic
light shake of crushed red pepper flakes
1 tbsp. sugar
salt to taste
Dash of olive oil

Wash eggplant. Dice and place in glass bowl and microwave for 3-4 minutes. In Dutch oven place the tomatoes, beans, spinach garlic, onion, other herbs, carrot, celery, sugar, salt and bring to simmer for about 5 minutes. Add eggplant and lightly simmer for about 15-20 minutes or to taste. Place in bowl and serve! You can add rice, barley, potatoes, pasta or the like for a "heartier" meal. Enjoy!

Thanks for posting this--it looks so yummy and I am crazy about eggplant. I'm wondering if you think it might taste good rolled up in some flatbread or is is soupy?
