View Full Version : I made the Strawberries & Cream Cake

I got rave reviews tonight with the Strawberries & Cream Cake. Next time I make it, I will make a few changes.
The recipe calls for 9" pans. I think I will change to 8" pans. The layers were a bit skinny, but not too bad.
Watch the cooking time on the cake. I cooked mine for the full 45 minutes and I think it was over done and a little bit tough. My guests didn't notice, but I did.

RobinC, this is good to hear. I made the cake layers last night and tomorrow I'm frosting and serving for Easter dessert. The cake layers seemed to turn out fine, however, I'll know more tomorrow. They did seem a bit short, but I thought with the sliced strawberries and whipped cream filling in between, it would raise the layers nicely. Would it help to slice the strawberries chunkier? Do you think making an additional half cream cheese frosting will be enough?

I think chunky sliced strawberries and the additional cream cheese icing would be good. I didn't think the cake was flat at all, it was about the height of a normal two layer cake. The filing does raise the layers.

I served this for Easter dessert and everyone really liked it. I did slice the strawberries chunky and used a bit more than was called for. I also made another half recipe of the cream cheese frosting, but only because I got crumbs from the cake in my first attempt. I refrigerated it at his point and then just went over it with another thin layer of frosting to cover the crumbs. I really think the amount of frosting in the recipe would have been enough.
RobinC, I do agree that the cake layers were a tad bit tough. Probably cutting down on the baking time would help. It was, however, very moist. Nice refreshing spring dessert. It made a great presentation, especially on a pedestal cake platter.

Thanks for the reviews! It's reassuring to hear that some people really liked how this turned out. We're having a brother & sister-in-law over for dinner sometime soon, and this sounds like a great dessert to serve!
