I am attempting homemade biscotti this weekend. Anybody got any good tips?

I just made biscotti for the first time a few weeks ago. All in all, they are pretty easy to make-just extra steps than regular cookies since you have to shape them, bake them, cut them and bake them again.
My only tip would be to leave yourself enough time-they are kind of time consuming with all that baking and cutting-but well worth the effort!

Hey newcooker!
CL had a tip on baking biscotti that I tried and liked: stand the slices up on their flat sides on the baking sheet instead of laying them out with cut sides down. THis allows you to bake the sliced cookies without opening up the oven to flip the cooking over. (From the November 2000 issue, which also has some fantastic biscotti recipes). Also- a sharp knife when slicing will save a lot on frustration over chipped biscotti.
Using cake flour also results in a more tender biscotti- which I prefer.

Thanks for the tips. I made both the Chocolate Chip Cranberry and the Toffee Biscotti from CL November 2000. Both were great. I may have a new favorite baking project on my hands!

The snickerdoodle biscotti (from the same issue as the toffee biscotti) were excellent ! I also stand my bisccotti up while backing...saves time.
