Here's what I've tried so far in April. . .
Carmelized-Onion Lasagna with Gorgonzola Sauce. Our family was split on this one. Two of my children hate zuchinni, so they voted thumbs down. Three of us voted thumbs up. The sauce had a wonderful, mild blue-cheese flavor. I really enjoyed this recipe. It took quite a while to prepare, but we got 10 servings out of it. It's filling.
Creamy Chicken and Mushrooms. Strangely enough, this reminded me of Beef Stroganoff. This was pretty tasty. I'll probably make it again. Changes: I used 2 1/2 cups of noodles rather than 2 cups, used green onion rather than shallots, added 1 clove of garlic, and added 1/4 t. salt because it seemed a little flat. By the way, the leftover Alouette garlic and herb spreadable cheese was really tasty on crackers.
Quick Vegetarian Chili With Avacado Salsa. I thought this recipe was outstanding, but the rest of my family just thought it was OK. I did add extra chili powder and added 20 minutes to the cooking time because I used regular rather than quick-cooking barley. I used dried cilantro to help keep the cost down.
Fettuccini and Tofu with Finger-Licking Peanut Sauce. I would rate this recipe a 9 out of 10. My husband thought it was too spicy, but I thought it was perfect. I used 10 oz. of fettuccine rather than the 8 oz. I usually hate tofu, so I was surprised at how good this was.
Spaghetti With Meat Sauce. Our whole family agreed that this was a winner. I used fresh garlic rather than the bottled and used skim milk rather than the 2%. I served it with freshly grated parmesan cheese over the top.
