Hi Everyone,
How was your Easter? Did everyone gain weight? We had the traditional Easter ham & fixings but the Cherry Cheese Pie was definitely not diet material....not to mention the Easter candy.
I'm getting ready to watch Emilycat run the marathon....at least she didn't have to worry about consuming extra calories.

We had a very nice Easter as well. It was actually very busy as my husband's birthday happen to fall on the same day. It does that some times. His parents called him their little write off since he was born on tax day. That's so cute! Anyhow, I enjoyed it but am glad it's over since I didn't really get to relax all that much. I hope everyone had a great day too! Happy Easter to everyone a day late! http://www.cookinglight.com/bbs/biggrin.gif

Well, this was my first holiday as a newly diagnosed diabetic. The day started off innocently enough. One of my corgi dogs apparently knew that I can still eat meat--it's only carbs that I have to avoid--because she brought in a mutilated rabbit's leg and proudly presented it to me near her food bowl. I have yet to check the backyard to see if there is 3/4s of a rabbit out there. The family dinner was quite a challenge. I never realized how much food my family eats! Since the food was laid out on the table, I was able to control my portion sizes and I made it through the meal fairly well. That is . . . until dessert time. My mom had made a sugar-free chocolate cream pie. I told her to give me a small piece, but I got the usual anyway. ("It's sugar free for goodness sakes.) Well, in spite of the pie, a couple hours later my blood sugar was only a bit higher than it should be. I guess I can consider that a minor victory. And of course, I need to let my dogs know that I am not a fan of rabbit--Easter bunny or otherwise!

Don, congratulations on making it through your first holiday as a diabetic. One of my friends from church was recently diagnosed and she says it's quite an adjustment. I didn't overeat for the holiday but only because I know I have to face the scales at Weight Watchers tomorrow.

This morning I posted on the Healthy Living BB about my disastrous eating habits this week-end. I'll spare you the gory details, but it was UGLY. I am horrified in retrospect. Several people have already jumped in with encouraging comments, which has helped immensely. And I'm back on the healthy food and exercise bandwagon today, but I think I am going to require all week to recover! Reading about Emilycat's amazing progress in her marathon run is great inspiration!

BTW, I made the Strawberry Cheesecake Trifle and it received rave reviews. Thanks for the recipe, Linda in MO! The remainder is right now in my fridge, and I do believe it will have to be tossed so that I don't eat the rest myself (DH is not real big on sweets).
